That sounds odd. My throttle action feels as if it hits hard stops in both directions. You can check this by looking at the carbs while you twist the throttle. The operating arm on the carb hits a mechanical stop when the twist grip is fully open.
There are mechanical stops in the twist grip too where the top cover fits into a slot in the throttle tube.
I don't know a lot of detail about this but it's certain that all airhead throttle assemblies are not the same. There are at least differences
in the profile of the cam that the tiny chain rides on which will affect the relation ship between twist grip rotation and cable pull. I wonder if you have the correct throttle assembly and gears fitted.

Thanks lads, I'll have a look. It is a hard stop at wide open, it's just fully closed that has 'bounce' in it.
I did wonder if it and my hot engine braking are linked, but I can't see how. This is so frustrating. I've never had this problem on any bike - airhead or otherwise.

Turned out that springiness was down to the the friction screw! #embarrassed!

Glad this is resolved! I actually like the grub screw and made a point of adding it to a bike that didn't have one. I have mine set to hold position with my hand off the grip and it reduces fatigue on a long day (500 miles is not unheard of in my travels) and makes me a smoother rider going through the gears. Smoothness important as I like to take my lady along.

I've used mine like that for decades. It doesn't take long to get accustomed to.
The downside is the wear that occurs caused by the tip of the screw rubbing.

There should be a nylon button on the end of the screw so no wear should occur.
