Hi,
I have a pair of single pot brembo callipers off a R80RT Monoshock bike. They have rigid brake lines on them.
Is there a conversion kit to ditch the rigid lines in favour of braided steel with banjo bolts?

I don't know of any kits as such. If you want to depart from the original layout, you will probaby have to work it out for yourself. Brake lines are easily sourced for just about any length and termination you want. AAMOI, there are at least three different layouts used on a monoshock 'RT over the years. A bit more information might help...

Could you duplicate the twin shock set up?

After a fashion... but you would need to find a different location for the splitter which, on the twinshock, is under the tank (there isn't enough room under a monoshock tank)... and the short rigid lines at the caliper end are different. You'd still have to source non-stock pipes and parts. In any case, in the context of the original query, the twinshock lines are mainly rigid apart from the run from the fairing to the forks.
