It's the great theft of mechanic's work. The fact is that I WANT (at least) a $95 an hour mechanic doing a valve adjustment on a Desmo Ducati, and I'm willing to pay for it,

When they do an oil change or a tire change, you don't get a $95 an hour mechanic - you get a $10 an hour mechanic - and you still get charged the same as you would for the really qualified wrench. Like ZM, I don't mind paying for expertise, but paying for expertise while receiving inexperience and incompetence is misrepresentation and theft in my book.
Charging $95 an hour by "The Book" hours is a lie. What they should really have is charges related to expertise. Charge $25 an hour for the $25 an hour work, and $100 and hour for the $100 an hour work. That still would not satisfy ZM's desire to actually have the work all done (and done correctly), but at least it wouldn't be systemically-designed fraud.
