A very loose baseline is to advance the timing in small increments until it pings under load and then retard it slightly until the pinging no longer occurs.

Re-assembly tip: Bake the new crankshaft sprocket in the oven at 375F for half an hour and douse the end of the crank with freeze spray the new sprocket will slide right back into place with minimal resistance. Gloves recommended.

EDIT: your title said crankshaft sprocket, your text said camshaft sprocket, not sure which one you want to replace. (I guess you edited it since.)

Heat up the area around the bearing until it's really hot (with a heat gun, not a torch) and then knock the complete assembly on a block of hardwood in the right direction and the pinion shaft will fall out with the bearing.
